not your mother's chicken salad

What do you think happened when I told my husband and son we were having salad for dinner last night? Honestly, I couldn't care! I love a good salad in the summer and with temperatures hitting 438 degrees today,this refreshing and healthy chicken salad hit the spot.
Turns out the boys put it down in record time and while they did the dishes, I sat myself on the couch to watch an episode of my favorite show, "On the Road with Austin & Santino".
Austin would be proud of this one.....please enjoy.

Chicken Salad
3 C cubed, cooked chicken breast
2 med apples, finely chopped
1 C slivered almonds, toasted
1/2 C dried cranberries
2 C plain Greek yogurt
1/2 C apricot jam (add more if you want it sweeter)
3 T Dijon mustard
3/4 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/4 C blue agave nectar (can substitute for jam)

Combine all ingredients and toss. Put in refrigerator until chilled. Serve inside half of a cold cantaloupe. Garnish with mixed greens and drizzle with the Raspberry Vinaigrette.

Raspberry Vinaigrette
all measurements are approximate,
throw it all together and taste.
1/2 bag frozen raspberries, thawed
3/4 cup raspberry vinegar
3/4 C olive oil
1/2 onion
1 tsp garlic powder
S & P to taste
honey or agave nectar to taste

Combine all in a blender and process until smooth.
