In my quest to ruin summer, I have decided it would be beneficial to spend a morning once a week in the kitchen with my boys. We prepare several things, and then I don't have to cook for a few days.
Yes, I'm a thinker!
And so, I introduce to you, the Ugliest Cookie Ever, which also happens to be the Best Cookie Ever. Whenever I take these to a function, I literally have to hold the platter in my hands and beg people to try them. After one bite, they are groveling at my feet for the recipe. I have probably given it out over 100 times, and now I'm giving it to you! If you care about yourself at all, you are going to want to double the recipe. Today.
Frosted Banana Cookies
3/4 c. Crisco
3/4 c. sugar
1 egg
1 teaspoon vanilla
2 ripe bananas, mashed
1/4 teaspoon salt
1 teaspoon baking soda
2 cups flour
Cream Crisco and sugar. Add egg, vanilla and bananas. Add dry ingredients. Drop by teaspoon onto greased cookie sheets. Bake at 350 for 9 - 10 minutes. (just until they start to brown along the bottom edges)
Frosting
4 Tablespoons butter
3 Tablespoons brown sugar
2 Tablespoons milk
Bring to a boil, take off heat and add 1 heaping cup of powdered sugar and beat well.
If chocolate is your thing, I have another treasure for you. I originally got this recipe off of the Picky Palate, but it's not on there anymore, so I am doing you a HUGE favor by having it saved in my archives. They are just like the chippers from Paradise Bakery. Be sure to use the dark cocoa, it makes all the difference.
Chewy White Chocolate, Chocolate Cookies
1 3/4 cups flour
1 1/4 cups Hershey Dark Chocolate cocoa powder
1 cup white sugar
3/4 cup brown sugar
2 teaspoons baking soda
1 cup butter
2 eggs
1 teaspoon vanilla
1/4 teaspoon salt
2 cups white chocolate chips
In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Add eggs one at a time, beating well with each addition. Add the salt and vanilla.
In another bowl, combine the flour, cocoa powder and baking soda. Gradually add to the creamed mixture. Fold in white chocolate chips. Drop by rounded spoonfuls onto a greased cookie sheet.
Bake at 350 for 8 - 10 minutes until fluffy but still soft. Allow cookies to cool on baking sheet for 5 minutes before removing to wire rack to cool completely.

ReplyDeleteThanks for the recipes! I made the Frosted Banana Cookies yesterday . . . they are delicious! I love following you girls. I had extra bananas so I made three batches. I didn't need to eat three batches so we shared with family and friends and my phone is still ringing. They LOVED them too!
